Here are some notes on how our Menu Plan Monday is actually playing out this week.
Monday night, I made the chicken and rice soup, whose recipe was posted under Menu Plan Monday. I thought the soup had very good flavor. The recipe said you could use broth or water for the liquid. I went with all broth (canned). That, plus the 5 bouillon cubes made it very flavorful. Plus, all the veggies were great.
Now, family-wise, the kids weren’t that fond of it. My first guess is that it had to do with the rice. My slow-cooker tends to run hot. The rice, by the time the soup was done, had become mush. Now, to me, it was fine. It gave the soup a thicker texture. But, the kids didn’t like that. So, I would maybe add the rice a little later. Or cook it for less time.
Tuesday night, we opted for left-overs. Tonight I bumped up the ham/asparagus dinner I had slated for Friday. I had gotten the asparagus on Sat. and wanted to use it while still fresh. That dinner turned out great. Tomorrow, I will post a picture and share some changes I made to the linked recipe. I added some things I thought would give it more flavor. Stay tuned!
